Coconut Cranberry Cake and Gingersnap Cookie Recipes

Two new recipes for anyone out there who likes pound cake and gingersnaps!

The coconut cranberry cake is really good. Unfortunately, someone used a butter knife to cut themselves a piece, and someone also did not take a very good picture, but trust me, it tastes great! The cranberries in the middle are actually not sour, they add a pleasant flavor, and they look very pretty. We had it over the holidays and it is on the permanent list now 🙂

After the Christmas cookie time was over, we missed having cookies around, so to ease ourselves out of having nice festive desserts, we made some oatmeal and walnut gingersnaps. These are small cookies and make a nice snack or dessert. They are, as Dink put it, a hard cookie with a chewy center. Here is the recipe and if you try either of these, hope you enjoy it!
