Strawberry Shortcake Recipe

Strawberry shortcake is a really good dessert that consists of something like a sweet biscuit, strawberries, and usually whipped cream or ice cream. Not only does it taste good, but it also looks nice so it’s good to have when you have guests over (the picture is the dessert I made myself from leftovers. I added blueberries and also didn’t take care in presentation, as you can probably tell). Whenever we want to make strawberry shortcake, we use this recipe:

  • 2 1/4 cups flour
  • 2 teaspoons baking powder
  • 1/2 cup white sugar
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla
  • 2/3 cup cream or half & half
  • 3 cups chopped strawberries tossed in sugar

Preheat your oven to 425 degrees. Combine the flour, baking powder, sugar, and salt in a large bowl. Whisk together and add butter until crumbled. Stir in the egg, cream, and vanilla until a soft dough forms.

Divide your dough into eight pieces. Lightly shape into a biscuit form and place on your baking sheet. Cook 12-15 minutes or until lightly browned around edges and top. Top with strawberries and whipped cream if desired.

Now for the reason why we also have a picture of a salad next to the strawberry shortcake. Well, the reason is because last weekend we tried salad with fresh fruit in it for the 1st time. We never wanted to eat it before because the thought of strawberries and grapes, melon and blueberries intermingled with lettuce and carrots made us turn up our noses. Our father also didn’t like the idea and told our mother that he would probably pick out his fruit to eat after he had finished his salad.

As it turned out, because of the salad dressing our mother made, we all really enjoyed the salad – fresh fruit mixed up with greens and all!
