We’ll Eat Kale If It’s Fixed Like This!

We just got back from visiting our oldest brother. He lives about an hour away so we can just pop up there when we want to. Anyway, we went up to celebrate with him. He just got a new job and he has been waiting for a long time. He’s going to work at a private school for autistic children and we are very happy for him so we went up with some food to celebrate.

One of the things we brought is kale. This recipe is really good and our brother’s wife really likes kale so it was a good thing to bring up. Dink and I both ate two bowls of it before we even left our house. Here is the recipe:

2-3 lb kale
8 bacon strips, diced
2 large onions, chopped
4 garlic cloves, minced
1 tsp salt
1/2 tsp pepper

Bring 1″ water to a boil in a large pot. Add kale and cook for 10-15 minutes or until tender. Cook bacon until crisp and drain on paper towel. Saute onions and garlic in 2-3 tsp bacon drippings until tender. Drain kale and add to onion mixture. Add salt, pepper, and bacon. Heat through. Makes 6 servings.

    I don’t rally like kale, but this recipe sounds as if it might taste good. Perhaps I’ll try it!
