Lemon Chess Pie Recipe

I had been wanting a lemon pie for about 5 months, so last week I finally just decided to look up a recipe and make it. I didn’t know how it would turn out, because for one thing I was making it, and for another thing it wasn’t going to be a family recipe.

I must say, it turned out pretty good. The taste of lemon was very strong, so if you like a strong flavor of lemon, you would like this recipe. As for the crust, we just made a regular white flour pie crust. If you’re interested in making this pie, here’s how it’s made:

1. Make the pie crust dough, roll it out, and put in a pie pan. Then refrigerate.

2. For the filling, combine:

6 tablespoons melted butter
3/4 cup fresh lemon juice (the juice from about 3 lemons)
1/2 teaspoon salt
1 2/3 cups sugar
1 tablespoon cornmeal
1 1/2 tablespoons cornstarch
5 large eggs

3. Pour this into the pie crust and bake for 45-50 minutes on 375˚F.

Enjoy! Since I like the flavor of lemon, I like it. But if you don’t like a strong taste of lemon, this pie might not be for you.

Anyway, we recently heard from our brother in Philadelphia that he saw lots of rats scuttling around near Rittenhouse Park a few nights ago. We are going rat-hunting tonight and with any luck, we’ll have videos of rats up soon 🙂
